From the Andes to Italy: A Culinary Journey Through Food and Wine

My love for food and wine has been shaped by the places I’ve lived and visited, each one leaving a unique flavor on my journey. Growing up in Mérida, Venezuela, and Mexico, now living in the United States, and experiencing the magic of Italy, I’ve learned to appreciate the connections between culture, food, and wine. Here’s how these places have inspired my passion for pairing, with more adventures to come.

Venezuela: The Heart of the Andes

In Mérida, the Venezuelan Andes shaped not only the landscape but also the flavors of my childhood. The food was warm, hearty, and deeply tied to the land. "Pizca andina", a comforting potato and milk soup, and fresh "arepas", filled with meat or cheese, were everyday staples.

While wine wasn’t a big part of the local culture, pairing flavors was always important. In Venezuela, I also developed a deep appreciation for rum, an iconic spirit that embodies the craftsmanship and culture of the region. While I never truly loved aguardiente, I came to respect its place in Venezuelan traditions and the stories it carries. These elements of my upbringing formed the foundation of my passion for pairing beverages with meals to elevate the dining experience.

Mexico: A Celebration of Bold Flavors

Mexico deepened my love for vibrant, bold dishes. In Mexico City, street food like "tacos al pastor" paired with a zesty Sauvignon Blanc became a favorite. In Oaxaca, the earthy, complex flavors of "mole negro" paired beautifully with a medium-bodied Malbec.

The Yucatán brought the tangy, citrus-marinated "cochinita pibil", which I discovered was perfectly complemented by a chilled rosé. And in Valle de Guadalupe, I explored Mexico’s growing wine culture, enjoying bold Nebbiolo paired with grilled octopus while surrounded by stunning vineyards.

Each region of Mexico celebrates its heritage through its food and wine, teaching me that pairings are as much about storytelling as flavor.

United States: A Melting Pot of Pairing Possibilities

Living in the U.S. has given me access to endless pairing opportunities. From Napa Valley’s iconic Cabernet Sauvignons to the unique wineries of the Carolinas, I’ve discovered a wealth of flavors.

The U.S. encourages creativity in pairings. A juicy burger with a bold Zinfandel or Carolina seafood with a crisp Albariño highlights how traditional rules can be bent for fresh, exciting combinations. The diversity of cuisines here has inspired me to experiment and keep exploring.

Italy: A Tapestry of Culinary Magic

Italy was unforgettable, with stops in Rome, Tuscany, Venice, Milan, and a one-day visit to Parma—one of the highlights of my trip. Each city offered something unique.

In Rome, I discovered how a simple "cacio e pepe" paired with a glass of Frascati could be pure bliss. Tuscany brought me rustic trattorias and a love affair with Chianti, where the wine’s fruity, spicy notes elevated every dish. Venice introduced me to fresh seafood paired with Soave, while Milan’s modern cuisine opened my eyes to bold pairings with Amarone.

But Parma—oh, Parma—was a revelation. That single day was packed with flavors that linger in my memory: Parmesan cheese, Prosciutto di Parma, and Lambrusco. The sparkling red wine was a perfect match for the rich, salty flavors of the region.

Italy taught me that food and wine are inseparable, each enhancing the other in a way that feels effortless and profoundly satisfying.

Looking Ahead

The journey doesn’t end here. Spain and Portugal are next on my list, promising bold reds and flavorful cuisine. I also can’t wait to return to Italy and dive deeper into South America’s wines and culinary traditions, from Argentina to Chile.

Each destination offers new stories to taste, and I’m eager to keep exploring. Food and wine aren’t just about eating and drinking—they’re about discovering connections, sharing experiences, and savoring life. There’s so much more to discover, and I’m ready for the adventure.

Alejandro.-
